A relative of Onion and Garlic, Leek tastes like a sweet, mild Onion, they are an excellent source of vitamin K, being a very good source of manganese, vitamin B6, copper, iron, folate and vitamin C. Leeks are also a good source of vitamin A, in the form of carotenoids, dietary fiber, magnesium, vitamin E, calcium and omega-3 fatty acids.

Leeks contain important amounts of the flavonoid kaempferol, which has repeatedly been shown to help protect our blood vessel linings from damage, including damage by overly reactive oxygen molecules. They have impressive concentrations of antioxidant polyphenols. These polyphenols play a direct role in protecting our blood vessels and blood cells from oxidative damage. They also have important concentration of the B vitamin folate.

Curled Cress

Cress is seriously flavorful - some would say spicy - but it's much more complex than that. Curled Cress will surprise you with its tangy flavor! Peppery and pungent, cress has the same tangy flavor that watercress does, being of the same botanical family. England, France, the Netherlands and Scandinavia all produce this plant commercially for use as an herb, Curled Cress provides many necessary vitamins and minerals including iron, iodine, phosphorus and sulfur.  It is also delicious as an addition to salads, vegetable dishes, and savories. Chop it and sprinkle atop hummus and other dips for a burst of heat!
